Every once in a while, I come across a recipe that is so good I can’t wait to share it on the blog! This recipe was one of those recipes that I know more people need to try. It’s super easy to make, takes about 30 minutes to make, is super filling, tastes amazing, and it’s kid-approved! You can make these high-protein chicken enchiladas for meal prep or a quick family dinner. The choice is yours!
A few weeks ago, I tried making these high-protein chicken enchiladas, thinking I would use it for meal prep for myself during that upcoming week. BUT one of my older boys saw me making this and asked if he could try it. I said yes, and he loved it. Now, I’ve made this recipe about 5 more times, and each time my older boys devour it!
Last week, I asked my Instagram followers to choose between high-protein chicken enchiladas and chicken noodle soup as the next recipe on the blog. I love this setup because then you can choose which recipe you’d like to see on the blog next. This recipe won, and I’m so happy to share it with all of you.
Nutritional facts: Each enchilada has 19 grams of protein and is 240 calories. If you are meal prepping, put 2 enchiladas in a container and times each calculation by 2.

Ingredients for High-Protein Chicken Enchiladas
- 3 cups of shredded, cooked chicken
- 1/2 cups of refried beans
- 3/4 cup of Greek yogurt
- 1 Tablespoon of taco seasoning
- 1 and 1/2 cups of shredded Mexican cheese
- 10 oz. can of red enchilada sauce
- 8 flour tortillas (8-inch and I use the Mission carb balance ones)

How To Make High-Protein Chicken Enchiladas
- Preheat oven to 375 degrees. Spray a 9X13-inch baking dish with non-stick cooking spray.
- In a mixing bowl, add Greek yogurt, refried beans, and taco seasoning. Mix well.
- Then stir in shredded chicken and 1/2 cup of shredded Mexican cheese.
- Scoop about 1/3 cup of mixture onto each tortilla.
- Roll each tortilla up and place them into the baking dish.
- Pour enchilada sauce on top (We use about 3/4 of the can because we don’t like them a little drier). Then top with the remaining cup of cheese.
- Bake in the oven for 15-20 minutes until the cheese is melted and bubbling.
- Serve and enjoy, or place two enchiladas in a container for meal prep lunches.
