If there’s one thing I have a lot of in my house, it’s zucchini! I planted two zucchini plants in my garden, and they have produced so much that it’s almost overwhelming. Ingredients for Loaded Zucchini Bake
- 1 medium zucchini
- 1 Roma tomato, diced
- 1 cup of cheddar cheese
- 1/2 cup of bacon bits
- 2 green onions, sliced
- 1/2 Tablespoon of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper

How To Make This Loaded Zucchini Bake Recipe
- Cut zucchini into slices and then cut slices into fourths.
- Preheat oven to 375 degrees. Grease a baking dish with cooking spray.
- Place cut zucchini into a mixing bowl. Add olive oil and seasonings. Stir to combine.
- Place half of the zucchini, half of the Roma tomato, half of the cheese, and half of the bacon into the baking dish.
- Repeat layers and top with green onions.
- Bake in the oven for 25-30 minutes.
- Remove, let cool for 5 minutes, and enjoy!
