This loaded zucchini bake recipe is easy to make, tastes delicious, and is very filling. It’s a mix of cheese and crunch from the zucchini.

If there’s one thing I have a lot of in my house, it’s zucchini! I planted two zucchini plants in my garden, and they have produced so much that it’s almost overwhelming. So, one of the things I’ve been trying is new zucchini recipes. I made this loaded zucchini bake recipe a few weeks ago, and I keep remaking it. Ingredients for Loaded Zucchini Bake

  • 1 medium zucchini
  • 1 Roma tomato, diced
  • 1 cup of cheddar cheese
  • 1/2 cup of bacon bits
  • 2 green onions, sliced
  • 1/2 Tablespoon of olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper

How To Make This Loaded Zucchini Bake Recipe

  1. Cut zucchini into slices and then cut slices into fourths.
  2. Preheat oven to 375 degrees. Grease a baking dish with cooking spray.
  3. Place cut zucchini into a mixing bowl. Add olive oil and seasonings. Stir to combine.
  4. Place half of the zucchini, half of the Roma tomato, half of the cheese, and half of the bacon into the baking dish.
  5. Repeat layers and top with green onions.
  6. Bake in the oven for 25-30 minutes.
  7. Remove, let cool for 5 minutes, and enjoy!
