If you know me at all you know one of my weaknesses is Chipotle! I LOVE a good steak burrito bowl. I’m currently participating in the 75 soft challenge and so I’m really focusing on eating healthier and more consciously. That said, I found some meal prep chicken burrito bowl recipes and made my own little take on it. This recipe is not only super delicious, it’s easy to make, AND you can customize your bowl to make it fit your diet or you wants.

Questions about this Chicken Burrito Bowl Recipe

How long can I keep this recipe in the fridge before it goes bad? In the fridge, this recipe will last up to 5 days. I wouldn’t try any longer than that. You can freeze this recipe for up to 2 months in freezer safe bags or containers.

When reheating in the microwave how long did you heat it for? I heated it for a minute, took it out, mixed everything up, and put it back in for another 30 seconds. But you see what works for you and the microwave you are using. I would start with 1 minute and add 30 seconds until you find the right warmth for you.

What makes this chicken burrito bowl recipe healthy? This recipe is healthy because it is high in protein from the chicken and black beans, lots of fiber from the veggies, and it’s keto friendly and gluten-free.

Can I eat this chicken burrito bowl recipe cold? Absolutely! This recipe is perfect for customizing to your preferences. If you want to eat this recipe cold, then go for it!

Are there any other ingredients I can add? Yes of course! I’ve seen people add limes, pinto beans, cilantro, a chipotle dressing, Greek yogurt instead of sour cream, bell peppers, onions, brown rice, Yumm sauce , or grape tomatoes. You can add whatever you want! It’s your bowl, this is just what I put in mine.

Ingredients

  • 1-1.5 pounds of chicken
  • 1 Tablespoon of olive oil
  • Packet of taco seasoning
  • Either 2 cups of packaged cilantro-lime rice or cauliflower rice (I did one cup of each)
  • 1 can of black beans
  • Romaine lettuce, cut into strips
  • Pico De Gallo or Salsa of choice
  • Fire-roasted corn (optional)
  • Shredded Mexican cheese (optional)
  • Sour Cream (optional)
  • Guacamole or sliced avocado (optional)

Directions

  1. In a Ziploc bag add olive oil, taco seasoning, and uncooked chicken. Seal bag and mix together. Place in refrigerator for an hour to marinate.
  2. Grill chicken on the stove, on a George Foreman, in an air fryer, or in an Instant Pot. I prefer the George Foreman. Then cut the chicken into cubes and set aside.
  3. Cook the rice as instructed on the package and set aside.
  4. In four separate refrigerator and microwave safe containers place 1 cup of rice, about 3 ounces of chicken, 1 cup of romaine lettuce, 1 Tablespoon of cheese, about 1 ounce of black beans, 1 ounce of pico de gallo or salsa, and 1 ounce of corn.
  5. Seal the containers and keep them in fridge until you are ready to use.
  6. When ready to eat, heat in microwave, and add sour cream and guacamole. You can also wait until after you heat to add the lettuce and cheese. Whatever your preference is, you can customize this recipe how you like.

Just so you know, I’m planning on having this recipe for lunch today and I’m so excited! To say I found my new hyper-fixation meal is a little bit of an understatement.
