This Healthy Chicken Salad is a delicious and simple recipe to make. It’s perfect for when you want a quick, tasty meal with few ingredients.

Currently, my house is busy! We are officially on summer break, which means four kids running around my house and me trying to keep it clean. It also means that my nights are filled with baseball games and finally getting home at 8 pm. By this time, all I want to do is make a quick meal and send the kids to bed. This Healthy Chicken Salad recipe is perfect for busy weeknights when I want something delicious and simple to make.

One of my requirements for the recipes I share is that at least some of my children like the recipe. I gave this recipe to my older kids, and they loved it! My younger two didn’t want to try it, but they aren’t fans of avocados. So I would recommend this recipe for older kids who like avocados.

Healthy Chicken Salad Ingredients

  • 2 Cups of Shredded Chicken
  • 4 Medium Avocados chopped into pieces
  • 1/2 Cup of diced red onions
  • 4 Tablespoons of lime juice
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper

Directions to Make This Healthy Chicken Salad

  1. Prepare your shredded chicken however you like. You can boil chicken or use rotisserie chicken. Add chicken to large mixing bowl.
  2. Add the avocados, red onions, lime juice, garlic powder, salt, and pepper to the bowl. Give mixture a few good stirs with a spoon until fully mixed together.
  3. Serve as a sandwich on some bread, put in some pita bread, use chips to eat, or you can top this healthy chicken salad on some crackers. Enjoy!
