The other day, I was researching the Mediterranean diet and got distracted by all the amazing food you can eat while on it. I am not following this diet, but I saw someone make a recipe similar to this one and got inspired.
I’m a huge fan of Caprese salad and love balsamic glaze. I thought it would be amazing on avocado toast, so you can start your day off with a delicious breakfast. This Caprese avocado toast is a healthy and simple breakfast recipe that you will fall in love with!

Ingredients For Caprese Avocado Toast
- 2-3 slices of sour dough bread
- 4- 6 sliced Mozzarella balls
- 9 grape tomatoes (halved)
- Avocado
- balsamic glaze
- salt and pepper to taste
How To Make It
- Toast the sliced sourdough bread.
- Cut the avocado in half and scoop the contents into a small bowl. Add salt and pepper to the bowl, then mash the mixture together.
- Slice the mozzarella balls and grape tomatoes.
- Once the sourdough is toasted, top with avocado mixture. Then top with some of the sliced mozzarella bits and grape tomatoes.
- Lastly, top with the balsamic glaze and enjoy!

Avocado 🥑 toast is interesting. Growing up I enjoyed slices of Avocado on hard dough bread or sweet bulla cake. But we never mashed the Avocado. This looks like a healthy snack. Thanks for sharing.
