This Mexican corn roll-ups recipe is easy to make and amazingly delicious! Full of flavor and spice makes this recipe the perfect party dip!
A few months ago, my future sister-in-law brought a Mexican street corn dip to a family event. I absolutely devoured it! I thought it was one of the best recipes I had tried in a while. After she left, I begged her for the recipe and then had a brilliant idea. What if I turned this delicious corn dip into an amazing pinwheel roll-up recipe? I have made this recipe twice, and each time people have loved it! I hope you enjoy this Mexican corn roll-ups recipe.

Ingredients for Mexican Corn Roll-Ups
- 3 (11 oz) cans of Mexicorn (sweet corn and diced red and green peppers) drained
- 1 (6 oz) can of chopped jalapeno peppers drained (save some liquid if you want more spice in the roll-ups)
- 1 (7 oz) can of chopped green chiles
- 1/2 cup of green onions, chopped
- 1 cup of mayonnaise
- 1 cup of sour cream
- 1 teaspoon of pepper
- 1/2 teaspoon of garlic powder
- 1 (16 oz) package of sharp cheddar cheese
- 5 large flour tortillas

How To Make Mexican Corn Roll-Ups
- Mix all the ingredients together but the flour tortillas in a large mixing bowl.
- Set in fridge for two hours or overnight.
- Once the mixture has set, remove bowl from fridge.
- Take a spoon and smear the mixture on a flour tortilla. Roll the tortilla into pinwheel shapes. Use toothpicks to stay in place if needed.
- Place the roll-ups in the fridge for another hour.
- Remove from fridge and cut tortillas into one-inch slices.
- Serve and enjoy!
