This Mexican corn roll-ups recipe is easy to make and amazingly delicious! Full of flavor and spice makes this recipe the perfect party dip!

A few months ago, my future sister-in-law brought a Mexican street corn dip to a family event. I absolutely devoured it! I thought it was one of the best recipes I had tried in a while. After she left, I begged her for the recipe and then had a brilliant idea. What if I turned this delicious corn dip into an amazing pinwheel roll-up recipe? I have made this recipe twice, and each time people have loved it! I hope you enjoy this Mexican corn roll-ups recipe.

Mexican Corn Roll-up

Ingredients for Mexican Corn Roll-Ups

  • 3 (11 oz) cans of Mexicorn (sweet corn and diced red and green peppers) drained
  • 1 (6 oz) can of chopped jalapeno peppers drained (save some liquid if you want more spice in the roll-ups)
  • 1 (7 oz) can of chopped green chiles
  • 1/2 cup of green onions, chopped
  • 1 cup of mayonnaise
  • 1 cup of sour cream
  • 1 teaspoon of pepper
  • 1/2 teaspoon of garlic powder
  • 1 (16 oz) package of sharp cheddar cheese
  • 5 large flour tortillas

How To Make Mexican Corn Roll-Ups

  1. Mix all the ingredients together but the flour tortillas in a large mixing bowl.
  2. Set in fridge for two hours or overnight.
  3. Once the mixture has set, remove bowl from fridge.
  4. Take a spoon and smear the mixture on a flour tortilla. Roll the tortilla into pinwheel shapes. Use toothpicks to stay in place if needed.
  5. Place the roll-ups in the fridge for another hour.
  6. Remove from fridge and cut tortillas into one-inch slices.
  7. Serve and enjoy!

Mexican Corn Roll-Ups Recipe: An Appetizer People Will Love!

If you are a fan of Mexican Corn dip, then you are going to love it in roll-up form. I love making this recipe because I know it will be a hit at every party I bring it to. Also, it's easy to make and tastes amazing! This is a filling appetizer with a little bit of spice.

Ingredients
