Mexican Corn Roll-Ups Recipe: An Appetizer People Will Love!

If you are a fan of Mexican Corn dip, then you are going to love it in roll-up form. I love making this recipe because I know it will be a hit at every party I bring it to. Also, it's easy to make and tastes amazing! This is a filling appetizer with a little bit of spice.

Ingredients
  

  • 3 11oz cans of Mexicorn
  • 1 6oz can of chopped jalapenos
  • 1 7oz can of chopped green chiles
  • ½ cup green onions (chopped)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 1 16oz package of shredded sharp cheddar cheese
  • 5 large flour tortillas

Instructions
 

  • Mix all the ingredients together but the flour tortillas in a large mixing bowl.
  • Set in fridge for two hours or overnight.
  • Once the mixture has set, remove bowl from fridge.
  • Take a spoon and smear the mixture on a flour tortilla. Roll the tortilla into pinwheel shapes. Use toothpicks to stay in place if needed.
  • Place the roll-ups in the fridge for another hour
  • Remove from fridge and cut tortillas into one-inch slices.
  • Serve and enjoy.
