Mexican Corn Roll-Ups Recipe: An Appetizer People Will Love!
If you are a fan of Mexican Corn dip, then you are going to love it in roll-up form. I love making this recipe because I know it will be a hit at every party I bring it to. Also, it's easy to make and tastes amazing! This is a filling appetizer with a little bit of spice.

- 3 11oz cans of Mexicorn
- 1 6oz can of chopped jalapenos
- 1 7oz can of chopped green chiles
- ½ cup green onions (chopped)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 tsp pepper
- ½ tsp garlic powder
- 1 16oz package of shredded sharp cheddar cheese
- 5 large flour tortillas
Mix all the ingredients together but the flour tortillas in a large mixing bowl.
Set in fridge for two hours or overnight.
Once the mixture has set, remove bowl from fridge.
Take a spoon and smear the mixture on a flour tortilla. Roll the tortilla into pinwheel shapes. Use toothpicks to stay in place if needed.
Place the roll-ups in the fridge for another hour
Remove from fridge and cut tortillas into one-inch slices.
Serve and enjoy.
