Ingredients for Southwest Chicken Salad Bowl

  • 2 Heads of Romaine Lettuce cut into strips
  • 2 cups of cooked chicken breasts, cut into pieces
  • 2 cups of cherry tomatoes, sliced in half
  • 1 cup of corn (canned and drained)
  • 1/4 cup of chopped red onion
  • 4 green onions, chopped into small pieces
  • 1 1/2 cups of canned black beans, rinsed and drained
  • 1/2 cup of shredded Mexican-style cheese
  • 1/4 cup of chopped cilantro
  • 1 lime
  • 1 cup of tortilla strips
  • 1 cup of ranch dressing
  • 2 tablespoons of taco seasoning

Directions for How To Make This Recipe

  1. In a large mixing bowl combine chicken, chopped romaine lettuce, cherry tomatoes, corn, red onion, green onions, black beans, and shredded cheese.
  2. Toss gently to mix all ingredients together.
  3. In a small bowl combine ranch dressing and taco seasoning.
  4. If meal prepping, divide salad into four containers. Add sliced lime to container and put on lids. When ready to eat, squeeze limes, top with some dressing, and 1/4 cup of tortilla strips.
  5. If you are using it as a side dish, squeeze lime over salad, top with dressing, and tortilla strips. Mix again and serve.
