Southwest Chicken Salad
This Southwest Chicken Salad can be used for a salad for dinner or a meal prep for lunches. This recipe is zesty and delicious! It's easy to make and is very filling.

- 2 heads romaine lettuce (cut into strips)
- 2 cups cooked chicken breast (cut into pieces)
- 2 cups cherry tomatoes (cut in half)
- 1 cup corn (canned and drained)
- ¼ cup red onion (chopped)
- 4 green onions (cut into pieces)
- 1 ½ cups canned black beans (rinsed and drained)
- ½ cup shredded Mexican cheese
- ¼ cup cilantro (chopped)
- 1 lime
- 1 cup tortilla strips
- 1 cup ranch dressing
- 2 tbsp taco seasoning
In a large mixing bowl combine chicken, chopped romaine lettuce, cherry tomatoes, corn, red onion, green onions, black beans, and shredded cheese.
Toss gently to mix all ingredients together.
In a small bowl combine ranch dressing and taco seasoning.
If meal prepping, divide salad into four containers. Add sliced lime to container and put on lids. When ready to eat, squeeze limes, top with some dressing, and 1/4 cup of tortilla strips.
If you are using it as a side dish, squeeze lime over salad, top with dressing, and tortilla strips. Mix again and serve.
