Southwest Chicken Salad

This Southwest Chicken Salad can be used for a salad for dinner or a meal prep for lunches. This recipe is zesty and delicious! It's easy to make and is very filling.

Ingredients
  

  • 2 heads romaine lettuce (cut into strips)
  • 2 cups cooked chicken breast (cut into pieces)
  • 2 cups cherry tomatoes (cut in half)
  • 1 cup corn (canned and drained)
  • ¼ cup red onion (chopped)
  • 4 green onions (cut into pieces)
  • 1 ½ cups canned black beans (rinsed and drained)
  • ½ cup shredded Mexican cheese
  • ¼ cup cilantro (chopped)
  • 1 lime
  • 1 cup tortilla strips
  • 1 cup ranch dressing
  • 2 tbsp taco seasoning

Instructions
 

  • In a large mixing bowl combine chicken, chopped romaine lettuce, cherry tomatoes, corn, red onion, green onions, black beans, and shredded cheese.
  • Toss gently to mix all ingredients together.
  • In a small bowl combine ranch dressing and taco seasoning.
  • If meal prepping, divide salad into four containers. Add sliced lime to container and put on lids. When ready to eat, squeeze limes, top with some dressing, and 1/4 cup of tortilla strips.
  • If you are using it as a side dish, squeeze lime over salad, top with dressing, and tortilla strips. Mix again and serve.
