The other morning I woke up thinking, “Wouldn’t it be awesome if I could make a big breakfast casserole that all my kids would like?” I found a few breakfast casserole dishes but none of them really wowed me. So I created this bacon and veggie egg casserole dish and my kids loved it!
You can use this recipe for your family for breakfast, for a brunch, or a meal prep for yourself. You can make the casserole and eat it every morning for a quick and delicious meal prep breakfast. Also, you can add different veggie or more variety of veggies if you want to.

Ingredients For This Bacon and Veggie Egg Casserole
- 6 oz of cooked diced bacon
- 1 cup of finely chopped onion
- 1 teaspoon of minced garlic
- 1 bell pepper cut into pieces (choose your favorite. I chose yellow.)
- 1 cup of frozen broccoli
- 1 cup of spinach
- 12 eggs beaten
- 1/3 cup of milk
- 1/2 teaspoon of thyme
- 1/4 teaspoon of red pepper
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 cup of shredded cheddar cheese
How To Make This Healthy Recipe
- Preheat oven to 350 degrees and grease 9X 13 casserole dish.
- In large skillet over medium heat cook onion, spinach, garlic, red pepper, bell pepper, and frozen broccoli for 5-10 minutes until veggies are soft, stirring occasionally.
- Remove from heat and let cool.
- In large bowl, whisk together eggs, milk, salt, pepper, and thyme.
- Add bacon and veggies to the mixture and continue to whisk.
- Pour mixture into prepared casserole dish, spread mixture evenly, and top with cheese.
- Bake for 25-30 minutes until top is slightly brown.
- Cool for 5 minutes and serve warm.
