Bacon and Veggie Egg Casserole

This easy and delicious bacon and veggie egg casserole is perfect for a family brunch recipe or a healthy breakfast meal prep recipe. I hope you enjoy this casserole.

Ingredients
  

  • 6 oz cooked diced bacon
  • ¼ tsp red pepper flakes
  • 1 cup finely chopped onion
  • 1 tsp minced garlic
  • 1 bell pepper cut into pieces
  • 1 cup frozen broccoli
  • 1 cup spinach
  • 12 eggs
  • cup milk
  • ½ tsp thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees and grease 9X 13 casserole dish.
  • In large skillet over medium heat cook onion, spinach, garlic, red pepper, bell pepper, and frozen broccoli for 5-10 minutes until veggies are soft, stirring occasionally.
  • Remove from heat and let cool.
  • In large bowl, whisk together eggs, milk, salt, pepper, and thyme.
  • Add bacon and veggies to the mixture and continue to whisk.
  • Pour mixture into prepared casserole dish, spread mixture evenly, and top with cheese
  • Bake for 25-30 minutes until top is slightly brown. Cool for 5 minutes and serve warm. Enjoy!
