Preheat oven to 350 degrees and grease 9X 13 casserole dish.
In large skillet over medium heat cook onion, spinach, garlic, red pepper, bell pepper, and frozen broccoli for 5-10 minutes until veggies are soft, stirring occasionally.
Remove from heat and let cool.
In large bowl, whisk together eggs, milk, salt, pepper, and thyme.
Add bacon and veggies to the mixture and continue to whisk.
Pour mixture into prepared casserole dish, spread mixture evenly, and top with cheese
Bake for 25-30 minutes until top is slightly brown. Cool for 5 minutes and serve warm. Enjoy!
