Chicken and Rice Casserole

This chicken and rice casserole is perfect for a weeknight family dinner. It is easy to make, very filling, and delicious. The Ritz cracker topping give this recipe a delicious breaded topping. The poppyseeds add a unique flavor. You'll love how much your family will enjoy this meal.

Ingredients
  

  • 2 pounds chicken breast
  • 2 cans cream of chicken soup
  • 1 cup sour cream
  • cup crushed Ritz crackers (not too finely crushed)
  • 6 tbsp butter
  • 1-2 tbsp poppy seed
  • 3 cups white rice
  • salt and pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Boil water in a medium saucepan. When boiling add chicken, salt, and pepper. Cook chicken for 20 minutes.
  • When the chicken is cooked remove and cut into pieces.
  • In a mixing bowl, mix the chicken pieces, cans of cream of chicken, sour cream, cooked white rice, and half of the poppy seeds.
  • Spray casserole dish with cooking spray. Place mixture into casserole dish and flatten to make it one layer.
  • Top mixture with crushed Ritz crackers and the rest of the poppy seeds. Top those with slices of the butter.
  • Place in the oven and cook for 35-40 minutes
  • Remove from oven, let cool for 5-10 minutes, serve, and enjoy!
