Chicken and Rice Casserole
This chicken and rice casserole is perfect for a weeknight family dinner. It is easy to make, very filling, and delicious. The Ritz cracker topping give this recipe a delicious breaded topping. The poppyseeds add a unique flavor. You'll love how much your family will enjoy this meal.

- 2 pounds chicken breast
- 2 cans cream of chicken soup
- 1 cup sour cream
- 1½ cup crushed Ritz crackers (not too finely crushed)
- 6 tbsp butter
- 1-2 tbsp poppy seed
- 3 cups white rice
- salt and pepper
Preheat oven to 350 degrees.
Boil water in a medium saucepan. When boiling add chicken, salt, and pepper. Cook chicken for 20 minutes.
When the chicken is cooked remove and cut into pieces.
In a mixing bowl, mix the chicken pieces, cans of cream of chicken, sour cream, cooked white rice, and half of the poppy seeds.
Spray casserole dish with cooking spray. Place mixture into casserole dish and flatten to make it one layer.
Top mixture with crushed Ritz crackers and the rest of the poppy seeds. Top those with slices of the butter.
Place in the oven and cook for 35-40 minutes
Remove from oven, let cool for 5-10 minutes, serve, and enjoy!
