Cornbread Casserole

This cornbread casserole is so simple to make. I love making this recipe for Thanksgiving because of how easy it is. I love the delicious corn flavor in the casserole and how moist this recipe is. There's nothing worse than dry cornbread casserole.

Ingredients
  

  • 1 large egg
  • 1 cup sour cream
  • ½ stick melted butter
  • 1 box Jiffy Corn muffin mix
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1 can cream style corn
  • 1 can sweet corn

Instructions
 

  • Preheat the oven to 350 degrees. Spray a 2-quart casserole dish with cooking spray.
  • Mix the egg, sour cream, butter, sugar, and salt in a mixing bowl.
  • Fold in the corn.
  • Pour the mixture into the casserole dish.
  • Bake in the oven for 40-45 minutes. To test whether the casserole is ready, poke a toothpick into the cornbread casserole; if it comes out clean, then you'll know it's fully cooked.
  • Remove from oven and let cool for 5 minutes. Then serve and enjoy!
