Crockpot Broccoli Cheddar Soup

This recipe is perfect for cold nights when you need something to warm you up! This Broccoli Cheddar soup is filling and delicious.

Ingredients
  

  • 12 oz freshly chopped broccoli
  • 1 medium yellow onion (finely chopped)
  • 2 carrots (peeled and grated)
  • ½ tsp salt
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp dry mustard
  • ¼ cup all purpose flour
  • 2 cups chicken broth
  • 2 cups half and half
  • 2 cups shredded cheddar cheese

Instructions
 

  • Add broccoli, onions, carrots, salt, paprika, garlic powder, dry mustard (or regular mustard), and black pepper to the crockpot.
  • In a mixing bowl, whisk in flour and chicken broth until no lumps. Add to the crockpot.
  • Stir ingredients in the crockpot together, cover, and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • About 30 minutes before you are ready to serve add the half and half and cheese. Stir together well.
  • Cover and continue cooking for 30 more minutes.
  • Blend with an immersion blender until your desired texture.
  • Serve and enjoy!
