Honey Garlic Chicken Bites

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup soy sauce
  • 3 tsp minced garlic
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • ½ tsp ground ginger
  • ¼ tsp red pepper flakes
  • ¼ tsp black pepper
  • ½ tsp salt
  • 2 tsp cornstarch
  • ¼ cup water

Instructions
 

  • Cut the chicken breasts into cubes and season with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken and cook for about 7 minutes, stirring occasionally.
  • Remove chicken and set aside
  • In the same skillet, add the minced garlic and ground ginger. Cook for about 30 seconds.
  • Add honey, soy sauce, rice vinegar, and red pepper flakes. Bring to a simmer.
  • Add chicken to the skillet and cover in sauce. Cover skillet and cook for 5-7 minutes on medium heat.
  • Add cornstarch and water to the skillet to make the sauce thicker. Cook for 2-3 more minutes stirring constantly.
  • Remove from skillet and serve with rice or veggies. Enjoy!
