Now, I’m about to be really honest with you for a second. I am not a fan of crack chicken recipes. I have made a few and thought they were just ok. BUT this crack chicken and rice skillet recipe was amazing! I loved the flavoring and the way it all came together. I would say this recipe takes about 30 minutes to make. This is great for those baseball nights when you get home from a game around 7 pm and need to have a fast and easy meal on the table soon.

Crack Chicken and Rice Skillet

Crack Chicken and Rice Skillet Ingredients

  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons of butter
  • 1/2 yellow onion, chopped
  • 1/2 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of paprika
  • 1 tablespoon of ranch seasoning
  • 1 tablespoon of minced garlic
  • 2 cups of chicken broth
  • 1 cup of jasmine rice
  • 1 and 1/2 cups of shredded Colby jack cheese
  • 2 ounces of cream cheese
  • 4 pieces of cooked bacon
  • 2 green onions, chopped

How To Make This Crack Chicken and Rice Skillet Recipe

  1. Add butter to a skillet over medium-high heat. Add cut chicken and season with salt, pepper, paprika, and ranch seasoning.
  2. Once the chicken is almost fully cooked, add in the onions and minced garlic. Stir together for a minute or two.
  3. Create a well in the center of the skillet and add the rice. Stir the rice around for a minute or two.
  4. Then, add in the chicken broth and stir everything together. Bring the skillet to a boil.
  5. Once boiling, reduce to low heat and cover for 15-20 minutes.
  6. Once rice is fully cooked, add in the cream cheese and 1 cup of the shredded cheese. Combine well.
  7. Top with the remaining cheese and crumble the bacon. Cover again until the cheese melts.
  8. Top with green onions, serve, and enjoy!
