Whenever we go to a Mexican restaurant, this is what Luke orders. He loves this dinner dish! I was on Pinterest, decided to look up recipes for Arroz con Pollo, and realized it’s super easy to make. So, I tried making this dish, and it was a success! Not only did Luke love this meal, but so did my children. They have asked me to make this dish again and again. I love the cheesy goodness and the flavor of the rice. It’s very filling, and it’s great for a busy week night.

Last week, I asked my Instagram followers to choose the next recipe I post on this blog. It was a close call, but this recipe beat the other by one vote. I’m so excited to share this recipe with you because it’s becoming one of our favorites.

How To Make This Arroz con Pollo Recipe

  1. Add white rice to the skillet over medium high heat. Add the olive oil and let it cook for a minute or two.
  2. Then add onion and minced garlic to the skillet. Stir well. Add chicken broth, tomato sauce, salt, pepper, cumin, and dried cilantro. Stir together until it starts to bubble.
  3. Once bubbling, cover with a lid and lower the heat to medium-low for about 20 minutes.
  4. While the rice is cooking, cut the chicken into strips or pieces. Then add butter to a different skillet over medium-high heat. Once the butter is melted, add the chicken and season with chicken seasoning. Use your favorite kind; the one I used is listed in the paragraph below. Cook for about 8- 10 minutes. Once cooked, remove from heat.
  5. Top the cooked rice with the cooked chicken, pour some melted queso on top, then add freshly chopped cilantro.
  6. Serve as is in a bowl or in some tortillas. Enjoy! (You can also add some cooked black beans, salsa, or any other toppings.)
