It’s summer time! One of my favorite summer side dishes is broccoli salad. My mother-in-law makes the BEST broccoli salad and any time she makes it I have at least three servings. Well, I decided to finally make it for myself! I also thought it would be awesome to make it keto friendly because I know so many people who are on the keto diet right now. You can just bring this to a summer BBQ and you’ll have a perfect, delicious, and healthy side. What makes this keto friendly? Well I use Swerve sweetener instead of sugar for the dressing. I found Swerve at Hy-Vee but I’m sure you can find it anywhere! I used sunflower seeds because that’s my preference but you could add slivered almonds or raisins.
Ingridents
- 5 cups of broccoli florets
- 1 cup of crumbled cooked bacon
- 1 cup of shredded cheddar
- 1/4 cup of chopped red onion
- 1/2 cup of sunflower seeds
- 3/4 cup of mayonnaise
- 1/4 cup of swerve sweetener
- 1 tablespoon of white vinegar
- salt and pepper to taste
Directions
- Mix the broccoli, bacon, cheddar, red onion, and sunflower seeds into a mixing bowl.
- In a smaller mixing bowl, mix the mayonnaise, swerve sweetener, white vinegar, salt, and pepper.
- Add the dressing into the bigger bowl with the broccoli salad and combine. Make sure that the dressing covers all the broccoli salad.
- Refrigerate for over an hour and then serve. I let my salad sit in the fridge overnight to really marinate it.
