It’s summer time! One of my favorite summer side dishes is broccoli salad. My mother-in-law makes the BEST broccoli salad and any time she makes it I have at least three servings. Well, I decided to finally make it for myself! I also thought it would be awesome to make it keto friendly because I know so many people who are on the keto diet right now. You can just bring this to a summer BBQ and you’ll have a perfect, delicious, and healthy side. What makes this keto friendly? Well I use Swerve sweetener instead of sugar for the dressing. I found Swerve at Hy-Vee but I’m sure you can find it anywhere! I used sunflower seeds because that’s my preference but you could add slivered almonds or raisins.

Keto Friendly Broccoli Salad

Ingridents

  • 5 cups of broccoli florets
  • 1 cup of crumbled cooked bacon
  • 1 cup of shredded cheddar
  • 1/4 cup of chopped red onion
  • 1/2 cup of sunflower seeds
  • 3/4 cup of mayonnaise
  • 1/4 cup of swerve sweetener
  • 1 tablespoon of white vinegar
  • salt and pepper to taste
Broccoli Salad

Directions

  1. Mix the broccoli, bacon, cheddar, red onion, and sunflower seeds into a mixing bowl.
  2. In a smaller mixing bowl, mix the mayonnaise, swerve sweetener, white vinegar, salt, and pepper.
  3. Add the dressing into the bigger bowl with the broccoli salad and combine. Make sure that the dressing covers all the broccoli salad.
  4. Refrigerate for over an hour and then serve. I let my salad sit in the fridge overnight to really marinate it.

    1. I’m not on keto at all but I’m in love with broccoli salad! I wanted to see if I could taste a difference and I couldn’t. I thought it would be something I can serve at a family gathering and know anyone could eat it!
