Alright, it’s confession time for me: I love avocadoes! I also didn’t really eat them (besides guacamole) until 5 years ago. I remember we had started introducing foods to JT and I read an article about how avocadoes were beneficial for brain development. Well, of course, I wanted JT to have every benefit I could offer so I immediately went to the store, got some avocadoes, looked up how to cut and prepare them, and fed them to him.
He LOVED them!
This is what I use to cut my avocadoes with ease:
But the problem was JT was only 6 months old at the time and he couldn’t eat a whole avocado. So I started to eat the other half. I was hooked! I would throw in lime juice and salt and eat it pureed.
After a few months, I looked up recipes on Pinterest (check out my Pinterest: https://www.pinterest.com/freckledkel/_created/ ) using avocadoes. I found one for avocadoes and pico de gallo. But I wanted some meat thrown in. So I tried grilled chicken breast, avocado, and pico de gallo. My socks were blown off!
Somehow I forgot about this recipe but one day I had an abundance of avocadoes in my kitchen. I decided to make grilled chicken, avocado, and pico de gallo. But this time I was making it for everyone. Luke tried it and he loved it, JT tried it and he loved it, Teddy tried it and he loved it! I hope you check it out, try it, and enjoy it too!
Ingredients
- Chicken Breasts (about one for each adult and half for each child.)
- Avocadoes (one or two depending on how much fat you want in it.)
- Pico de gallo
- Seasonings for chicken
- Lime (optional)
Directions
- Season and grill the chicken. I prefer to use our George Foreman grill for the chicken because it is easier for me.
- Slice the avocado and cut it into chunks.
- Slice the chicken into cubes.
- Mix the avocadoes, chicken, and however much pico de gallo you want.
- Serve while the chicken is still hot.
- Enjoy!

Even though it took me about 4 years, I’m so glad that I remembered this recipe a few weeks ago. I’m also glad that my family enjoyed it and now I get to share it with you.
