Hello, winter! One of my favorite things about winter is all the delicious and warming winter recipes. This instant pot beef stew is one of my go-to dinner recipes. I love curling up with a big warm bowl of this stew. It’s filling and it is so delicious your family will ask for it time and time again.

Instant Pot Beef Stew

Stew Ingredients

  • About 1 pound of stew meat (Cut into pieces)
  • 2 Tablespoons of flour
  • 2 Tablespoons of unsalted butter
  • About 5 large red potatoes
  • 2 Cups of beef broth
  • 1 medium yellow onion (diced)
  • About 1 cup of chopped carrots
  • About 1 cup of chopped celery
  • 1 Tablespoon of minced garlic
  • 1 Tablespoon of soy sauce
  • 2 Tablespoons of Worcestershire sauce
  • 2 Tablespoons of tomato paste
  • salt and pepper to taste

This is the Instant Pot that I have and I love it!

Directions

  1. Chop vegetables into 1 inch pieces.
  2. In a large bowl combine stew meat and flour until meat is covered.
  3. Set Instant Pot to saute setting and add the butter. Once the butter has melted, add the stew meat. Make sure to brown meat on all sides.
  4. Pour in beef broth and scrape bottom of the Instant Pot to deglaze.
  5. Add all the other ingredients to the Instant Pot. Stir until mixed well.
  6. Lock lid and set to Stew mode for 35 minutes.
  7. Allow pressure to release for 30 minutes after cooking time.
  8. Carefully release steam valve and open lid.
  9. Serve and enjoy!

There are so many reasons why I love this recipe. I love the simplicity of this recipe, I love how quickly it is made, and I love how amazingly delicious it is. But the thing I love the most is the fact that it sneaks so many vegetables into my children’s dinner. My boys love all the mushy carrots and potatoes!
