Hello March! I can’t believe we are already in March. Where does the time go? I also can’t believe it’s already Lent! I’m not one of those Catholics who was raised on the practice of not eating meat on Fridays during Lent but I’m trying to get more seafood recipes in my Rolodex of recipes. I saw this cilantro-lime shrimp recipe that I’ve been DYING to try! Spoiler alert: We tried it and we LOVED it!

This recipe is amazing because it’s a one-pan recipe so less cleanup (something I always love!), The kids really enjoyed it, it’s filling thanks to the rice, and it has some fiber in it with the beans. I like to think of this recipe as a knock-off of Chipotle but it’s a shrimp burrito bowl.

Ingredients

  • 1 Pound of peeled and deveined raw large shrimp
  • 2 Tablespoons of olive oil
  • 1 1/2 Tablespoons of minced garlic
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of red pepper flakes
  • 1 cup of uncooked Jasmine rice
  • 2 cups of chicken broth
  • About 2 Tablespoons of lime juice
  • One can of rinsed and drained black beans
  • 1/2 cup freshly chopped cilantro

How to Cook the Cilantro-Lime Shrimp

  1. Heat olive oil in the pan on medium heat
  2. Add the shrimp, minced garlic, 1/4 teaspoon salt, and red pepper flakes.
  3. Cook shrimp for about 3-4 minutes total, stirring the shrimp once or twice, until the shrimp turns pink.
  4. Remove the shrimp from the pan and put them in a mixing bowl.

Directions for Cooking the Black Beans and Rice

  1. Add the chicken broth, uncooked rice, and the remaining salt to the now-empty pan. Bring to a boil and mix everything well.
  2. Reduce heat so the broth is simmering. Cover the lid and simmer for 20 minutes. Check to make sure the rice is fully cooked. If not, add 1/2 cup of water and continue simmering for 5 more minutes.
  3. If the rice is fully cooked, mix in lime juice, black beans, and cilantro.
  4. Add the extra lime juice and the freshly chopped cilantro to the mixing bowl with the shrimp. Mix completely and then add to the pan with the rice and beans.
  5. Reheat the food gently and serve.
