Sometimes in life you stumble upon a recipe that makes your mouth water. This loaded mashed potato casserole does that for me. When I saw a picture of this recipe, I knew instantly that I was going to make this recipe a blog post. This is the perfect side dish recipe to use when you are going to your summer BBQs or a potluck.

If you are anything like me, then you are also a HUGE fan of potatoes. I love any kind of potatoes: baked, French fries, cheesy potatoes, potato wedges, and, of course, mashed potatoes. My favorite meal would have to be steak and mashed potatoes. So, this loaded mashed potato casserole is officially one of my favorite side dishes!

Loaded Mashed Potato Casserole Ingredients

  • 6 large russet potatoes
  • 1/4 cup of butter
  • 4 oz of cream cheese
  • 1/2 cup of milk
  • 2/3 cup of sour cream
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt (add more or less if desired)
  • 1/2 teaspoon of pepper (add more or less if desired)
  • 2 cups of shredded mild cheddar cheese
  • 1 1/2 cups of bacon bits (you can make your own bacon if you want, just cook and crumble it.)
  • 1/4 cup of diced green onions (if desired)

Directions For Loaded Mashed Potato Casserole

  1. Preheat oven to 375 degrees. Spray a 9X13 casserole dish with cooking spray so the casserole doesn’t stick.
  2. Take the russet potatoes and wash, peel, and dice them. Add them to a pot, cover them with water, add some salt, and get the water to boil. Boil the potatoes until tender, about 15 minutes.
  3. When potatoes are tender, drain water and mash the potatoes. Then add the butter, cream cheese, milk, and sour cream. Gently fold them together until mixed.
  4. Add in garlic powder, salt, pepper, 1 1/2 cups of shredded cheese, and 1 cup of bacon.
  5. Pour mixture into casserole dish.
  6. Top the mashed potato mixture with the remaining shredded cheese and bacon.
  7. Bake for 25-30 minutes.
  8. Remove from oven and add green onions if desired.

Final Thoughts

There’s nothing I love more than a good potato recipe and I’m so happy to share this loaded mashed potato casserole with all of you. There are many reasons to love this recipe but, personally, I love that it takes a classic side dish (mashed potatoes) and gives it a little bit more flair. It’s always a great idea to shake things up especially when you have young children like mine. They love trying new recipes with me!

This recipe will stay good in the fridge for about 3 days after it’s made. It will stay good in the freezer for 3 months. I’ve been reheating them in my microwave, but you can in the oven.

If you want to make it ahead and keep it in the fridge, you can. Just cook it covered for 10-15 minutes then uncover and bake for 25-30 minutes.
