It’s the Thanksgiving season and I’m ready for all the delicious food. I’m a HUGE fan of all the side dishes at Thanksgiving. This cornbread casserole side dish is one I used to make all the time when I was first learning how to cook. I love how simple this recipe is to make and how delicious it is. It’s packed with the corn flavor and pairs perfectly with turkey.

Ingredients for Cornbread Casserole

  • 1 large egg
  • 1 cup of sour cream
  • 1/2 stick of unsalted butter (melted)
  • 1 box of Jiffy cornbread mix
  • 1 Tablespoon sugar
  • 1/2 teaspoon of salt
  • 1 (15 oz.) can of cream-style corn
  • 1 (15 oz.) can of sweet corn (drained)

How To Make This Cornbread Casserole Recipe

  1. Preheat the oven to 350 degrees. Spray a 2-quart casserole dish with cooking spray.
  2. Mix the egg, sour cream, butter, sugar, and salt in a mixing bowl.
  3. Fold in the corn.
  4. Pour the mixture into the casserole dish.
  5. Bake in the oven for 40-45 minutes. To test whether the casserole is ready, poke a toothpick into the cornbread casserole; if it comes out clean, then it’s fully cooked.
  6. Remove from oven and let cool for 5 minutes. Then serve and enjoy!
