Hello, my name is Kelly and I’m addicted to potatoes. Give me any kind of potatoes and I’ll love you forever! Cheesy, mashed, baked, scalloped, or any other kind I will devour. If I had to choose my favorite meal it would be steak and mashed potatoes. There’s something so simple and delicious about a good steak with mashed potatoes as a side. Just a classic meal!
When I first started cooking, I thought mashed potatoes were this elusive and tedious recipe that I would struggle to make. So instead, I use to make the potatoes from a box. They were just fine but who wants just fine potatoes?
About a year ago I received The Pioneer Woman’s recipe book. I read through most of the recipes and landed on her stovetop mashed potatoes recipe. It seemed so simple that I decided to try it! This recipe below is not the same as The Pioneer Woman’s recipe (She uses heavy cream and I use half and half with as little bit more butter) but it is inspired by her recipe.

Mashed Potatoes Ingredients
- 3 pounds of Yukon gold potatoes, peeled. (You can leave some bits unpeeled if you want some potato skin in your mashed potatoes.)
- 1 cup of whole milk
- 3/4 cups of butter (1 and 1/4 sticks of butter)
- 1/4 cup of half and half
- 4 oz cream cheese, softened.
- Salt and pepper to taste
Directions for Mashed Potatoes
- Wash, peel, cut the potatoes into wedges. Place potatoes into a large saucepan and cover with water. Add a little salt to the water and potatoes.
- Boil over medium-high heat until potatoes are fork -tender (you can pierce them easily with a fork). Usually, it takes about 25 minutes for them to be ready.
- Pour the potatoes into colander to drain them and set the potatoes aside.
- In the same saucepan put the butter, milk, half and half, salt and pepper over medium heat. Stir until the butter has melted.
- Add cream cheese and stir until the cream cheese melts.
- When the mixture is fully melted, throw in the cooked potatoes, and turn off the heat.
- Use a potato masher to mash the potatoes until they are smooth. Don’t over mash the potatoes or they will become gluey.
- Serve and enjoy or put the lid on if you need to keep the mashed potatoes warm.

Final Thoughts
This mashed potato recipe is perfect for the holiday season coming up. It’s the BEST side dish (in my opinion) at Thanksgiving! I just love how easily you can pair this with any meat. It works with ham, steak, and turkey. You can also store this in the fridge and reheat on the stove, just add a little milk when you reheat it to keep it smooth.
