One of my favorite things about this blog is that I get to try new recipes. Sometimes they are complete fails (I tried making copycat Panera Bread soup. It was HORRIBLE!) and other times they become one of my favorite recipes! This pot roast recipe has become a favorite for my whole family!

So, for those of you who don’t know, we got 1/2 a cow and with that, we had a TON of beef I’ve never cooked with before. One of the things I really wanted to make was a pot roast.

Cut to me finding this crockpot pot roast recipe and trying it a few months ago. Everyone in the family (kids included) loved this recipe so much that I had to make it again the next month. One of the main reasons why I love this recipe is because it is beyond simple and tastes amazing! I love how the crockpot keeps the meat tender and the mushroom soup and onion packet keep it flavorful.

Pot Roast Ingredients

  • About 5 pounds of pot roast
  • 2 cans of condensed cream of mushroom soup
  • 1 packet of onion soup mix
  • 1 1/4 cup of beef broth
  • Salt and pepper to taste

How to Make it!

I swear this recipe couldn’t be simpler:

  1. Put roast in the crockpot and season to taste.
  2. Mix the onion packet with the two cans of condensed cream of mushroom soup in a separate bowl.
  3. Cover the pot roast with the mixture.
  4. Add the 1 1/2 cups of beef broth to the crockpot.
  5. Cook on low for 8 hours or high for 4 hours. Tip: Flip the pot roast over about halfway through.
  6. Cut it into chunks and serve.

What to Pair it With

I LOVE to pair this pot roast with mashed potatoes! You can use the leftover sauce in the crockpot and make a gravy. You can also pair it with cheesy potatoes. Before You Go!

While I’m typing this recipe up I’m wondering when I’m going to cook this pot roast recipe again. We are having a big party next month as a sort of “Meet Cooper Party” and I’m thinking it would be perfect to have this in the crockpot if anyone wants to eat some.
