Summer Veggies Bake

A few weeks ago on my Facebook page for this blog I made a poll asking people what my next recipe should be. It was very close but people wanted a side dish for my next recipe. The reason why I chose this Summer Veggies Bake recipe is because I know a few people who grow zucchinis and tomatoes in their garden. I’m pretty sure they are almost ripe so I thought I would give a new recipe for people to make with their vegetables from their garden!

Ingredients

Ingredients

  • 1 cup of sliced yellow squash
  • 1 cup of sliced zucchini
  • 2 cups of sliced tomatoes
  • 2 tablespoons of chopped basil
  • 1/4 cup of grated parmesan cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
Cut Veggies

Instructions

  1. Slice the tomatoes, yellow squash, and zucchini in 1/4 inch thick slices.
  2. Preheat the oven to 350 degrees and spray an 8X8 baking dish with cooking spray.
  3. Layer the tomatoes, yellow squash, and zucchini in a pattern in the baking dish.
  4. Whisk the dried basil, olive oil, parmesan cheese, salt, and pepper in a small bowl. Pour it over the summer veggies until covered.
  5. Bake in the oven for 20-25 minutes until vegetables are slightly tender.

Final Thoughts on Summer Veggies Bake

A note I need to make on the summer veggies bake I made and used for the photos: I couldn’t find any fresh basil anywhere so I used dried basil. I don’t think it tasted as good so I would urge you to use fresh chopped basil. I really hope you enjoy this recipe and as always if you do make this please let me know how it goes!   1. Kelly Krebs, every time I see your last name it reminds me of the Krebs Cycle in my Biochemistry class in college. I also love the name of your blog; it’s very unique. I am so happy you shared this recipe. Zucchini is fairly new to my kitchen. love the simplicity of your recipe. Hope I will be able to use the fresh basil I am trying to grow in my NYC apartment.
