I think my family is over my Chicken, Broccoli, and Rice casserole and so I have started making them this chicken and rice casserole dish. They love it so much! This recipe came from my Mother-in-Law who makes this dish. It is a recipe that most of her children love (I say most because I’m sure if they all love it but the ones I’ve talked to do). My husband has been begging me for years to get the recipe from her and make it. I finally asked and I’m glad I did. I hope you check out this recipe and if you make it, I hope you enjoy it as much as me and my family do.

Why Do I Love Chicken and Rice Casserole?

I love this chicken and rice casserole recipe for a number of reasons. One reason is that I know my children will eat it. The last time I made this recipe almost all of the casserole was gone. The second reason is that I know there will be a least some leftover for me for lunch the next day. I love having casseroles for leftovers because I toast them in the toaster oven, and they are crispy and delicious!

My third reason is because this recipe is simple and doesn’t take very long to make. Life is pretty busy and while some of you might have the time to make complicated meals, I do not. I live for recipes that are easy and delicious. Lastly, I love that this recipe is very filling. I know that my children won’t ask for a snack 30 minutes after eating this recipe. Which, unfortunately, happens quite a lot!
