I know what you’re thinking, “What in the world is Italian grilled cheese?” Well, about 13 years ago I was freshman at ISU and went to lunch at the dorm. Someone in front of me ordered an “Italian Grilled Cheese” at the sandwich bar and then I watched the chef make a delicious grilled sandwich. In that sandwich was Italian shredded cheese, tomatoes, and fresh basil. If that sounds good to you then you need to keep reading!
I’m sorry I have been gatekeeping this recipe for so long! I should have posted it long ago, but I didn’t think anyone would be interested. But I was pleasantly surprised when on a poll on my Instagram so many people wanted the recipe over baked parmesan chicken. Ingredients
- Sliced bread (2 for each sandwich)
- Italian blend shredded cheese or just mozzarella is good, too
- Tomatoes, sliced.
- Mayonnaise or butter for spread
- Basil, freshly cut.
Directions
- Spread some mayo or butter on one side of the slices of bread.
- Place bread, spread side down, on griddle or on pan over medium-low heat.
- Top with cheese, basil, and tomato slices. Cook until cheese starts to melt. The bread should be a little golden brown.
- Remove slice from pan or griddle. Place bottom bread slice on pan/griddle.
- Top bottom slice with some cheese and more basil if you want.
- Add the slice with tomatoes to the bottom slice to make it a sandiwch.
- Cook until both sides are perfectly browned.
- Remove from heat, cut sandwich in half and enjoy.
