If you have ever read any of my other recipe posts you know that I love simplicity! Also, I HATE washing dishes. This recipe is perfect for me because it’s not only super easy but you only use one pot. So less dishes for me and this meal typically takes about 30 minutes to make! Check out this delicious and easy one pot garlic shrimp pasta recipe!

Ingredients
- 8oz of linguine
- 2 tablespoons of olive oil
- 8 tablespoons (one stick) of unsalted butter
- 4 teaspoons of minced garlic
- 1/2 teaspoon of red pepper flakes
- 1 bag of frozen small shrimp
- 1 teaspoon of dried oregano
- 4 cups of baby spinach
- 1/4 cup shredded parmesan cheese
- 2 tablespoons of dried parsley
- 1 tablespoon of lemon juice
- salt and pepper to taste
Instructions
- In a large pot boil water and cook linguine. Cook until al dente.
- Drain and set pasta aside.
- In the same pot heat olive oil and 2 tablespoons of butter. Add garlic and red pepper flakes. Cook until fragrant.
- Throw in shrimp and salt and pepper to taste. Stir shrimp until it starts to turn pink.
- Add oregano and spinach. Cook until spinach wilted.
- Put pasta back in pot, add remaining butter, parmesan, and parsley. Stir until well mixed and butter is melted.
- When shrimp are fully cooked add the lemon juice. Mix once more and serve!
One-Pot Lemon Garlic Shrimp Pasta
Ingredients
- 8 oz linguine
- 2 tbsp olive oil
- 8 tbsp unsalted butter (one Stick)
- 4 tsp minced garlic
- ½ tsp red pepper flakes
- 1 bag frozen small shrimp
- 1 tsp dried oregano
- 4 cups baby spinach
- ¼ cup shredded Parmesan cheese
- 2 tbsp dried parsley
- 1 tbsp lemon juice
- salt and pepper to taste
Instructions
- In a large pot, boil water and cook linguine. Cook until al dente.
- Thaw out shrimp according to directions on bag.
- Drain water and set pasta aside.
- In the same now empty pot, heat olive oil and 2 Tablespoons of butter. Add garlic and red pepper flakes. Cook until fragrant.
- Throw in shrimp and salt and pepper to taste. Stir shrimp until they start to turn pink.
- Add oregano and spinach. Cook until wilted.
- Put pasta back into pot and add remaining butter, Parmesan, and parsley. Stir until well mixed and butter is melted.
- When shrimp is fully cooked, add lemon juice. Mix once more and serve.
